HAMBURGER SOUP 

 

     The beauty of this dish is that it's versatile, cooks in one pot for easy cleanup, and is quick and delicious.  It's an easy "dump" recipe using ingredients you probably already have (except maybe Clamato juice).  You can get creative with spices for a change of flavor.  Served with hot crusty French Bread and a salad, it's a complete and hearty meal.  Around our house it's sometimes called "Hangover Soup".  Make a big batch, it tastes even better the next day!!

 

            Ingredients

    1 lb. lean Hamburger
    1 to 2 cloves garlic, minced
    1 med. to large onion, chopped
    celery, chopped (optional)
    32 oz. Clamato Juice
    1 can diced tomatoes
    1 can kidney beans
    1 can garbanzo beans
    salt, pepper and seasonings to taste
    2 to 3 c. veggies, your choice
    big handful of pasta, your choice

                                                      

     This one-pot dish started as a way to stretch a pound of hamburger to feed 4 hungry people with stuff I had in the pantry.   It's also easily expanded to feed more!   I added a can of green beans, a can of garbanzo beans and a can of kidney beans to the rich meat & tomato broth, threw in some macaroni, and it was good!

 Later I improvised with frozen vegetable combos like broccoli /cauliflower/carrots or "fiesta vegetables".  Fresh zucchini makes a great add-in.  The only vegetable I don't use is peas.
      As for the Pasta, any small type will do, like macaroni, pasta shells, or spaghetti or fettucini, broken into 2-3 inch pieces.  Even a little of each works fine, whatever you have on hand.  
Season with Italian herbs, Mexican flavors, whatever.  We particularly like Cavendars Greek seasonings.

      To start, in a large soup pot, cook meat with onions, garlic, celery, salt & pepper until well browned.  Drain fat if needed.  Stir in juice, seasonings, and canned tomatoes and the beans.  Simmer 5 - 10  minutes to let flavor develop.  Add veggies of your choice and simmer until cooked.  Stir in the pasta and simmer until tender.
      Serve with hot rolls or bread, pass some Parmesan cheese, and enjoy!!
