Fran's Galley Pan Fried Potatoes and Onions

 


 We have cruised over 20,000 miles and by far, this is our favorite cruising recipe since potatoes and onions last for weeks on board. Assuming you have a fridge with freezer, precut and freeze your meats.

                     Ingredients
  4 medium potatoes cubed, 1/4 inch
  1 large onion, chopped
  meat of your choice, sliced
  Worcestershire Sauce
  vegetable oil
  garlic, minced (optional)
  parsley, dried (optional
  salt & pepper to taste

This is a one pan meal, so wash, peel and cut about 4 medium potatoes into ¼ inch cubes. Peel one large onion and cut into small pieces. Put a layer of vegetable oil into the pan and heat up. 

You need to judge the propane heat on your own stove. Add the potatoes and onions and let them sauté turning every few minutes on medium heat. Do not rush this part, let the aroma fill the galley and enjoy. It may take up to 15 minutes for the potatoes and onions to cook through without getting mushy. Add salt and pepper about half way through.

When the potatoes and onions seem to be translucent, then pour in Worcestershire sauce so it coats the potatoes and onions. You can add dried parsley at the last minute as it adds a bit of color and freshness. You could also add minced garlic if you like.

About half way through the cooking, I add sliced chicken breast, steak, pork or lamb that I had frozen in the reefer and thawed. Since we would really eat only one meal a day, I would thaw the meat at sunrise and it would be ready by mid-day. This way, we would have our protein in a one pot meal.
